Venison Blue Cheese Burgers
Preparation Time: 15 minutes
Cooking Time: 15-20 minutes
Yield: 5 servings
1 pound ground venison
1 tsp garlic
1 TBS olive oil
1 C onion, chopped (1 medium)
8 ounces brown mushrooms
1/4 C bread crumbs
1 TBS soy sauce
1 tsp basil
1/2 tsp salt (non iodized sea salt)
1/4 tsp pepper
2.5 ounces blue cheese
In large pan, add garlic, onion and mushrooms; cook until tender 5-7 minutes, set aside. In large bowl add venison, bread crumbs, soy sauce, basil, salt and pepper. Mix well, add mushroom mixture and combine thoroughly.

Prepare 5 blue cheese fillings by rolling cheese into 1/2 ounce balls, set aside.
Form 5 ground venison patties. Poke hole into side and stuff with cheese. Wrap meat around cheese and form back into patty. Cook on the grill or under the broiler 5 minutes per side.
