Wilted Spinach, Onion, Avocado and Apple Salad
1/2 pound baby spinach leaves, washed and stemmed
1 TBS olive oil
3 TBS fresh lemon juice (juice of 3 lemons)
1 green apple, medium, thinly sliced
1 avocado, sliced
2 C onion, coarsely sliced
1 1/2 tsp cumin seeds
1/2 tsp salt
1/4 tsp pepper
Place spinach in a large bowl; set aside. Slice apple and place in shallow bowl, pour approximately 2 tsp of the lemon over the top, set aside. Slice avocado and do the same, covering with remaining lemon juice, set aside. In a small pan, add olive oil and onion; cook until translucent 2-3 minutes; add cumin seeds and cook approximately 1 minute longer. Remove from heat and pour over spinach greens. Add the apple and avocado; gently combine. Sprinkle with salt and pepper. Serve immediately.
Tip: Place some of the spinach leaves into the pan and wipe to get all the excess oil and cumin for added flavor.
